Follow The Directions

Bake prosciutto until crispy and golden brown, 6 to 8 minutes. Remove from oven and coarsely chop. Reduce oven temperature to 350 degrees F (175 degrees C) and move the rack to the middle position. (10 minutes)

In a saucepan over medium heat, melt butter. Whisk in flour and cook for 1 minute. Stir in garlic powder, cumin, red pepper flakes, and black pepper; cook for 1 minute more. (5 minutes)

Whisk in Greek yogurt and cook until heated through and bubbling, 2 to 3 minutes. Gradually whisk in 1 1/2 cups of the reserved pasta water, cooking for another 2 to 3 minutes until smooth. (7 minutes)

Add cream cheese and stir until melted. Gradually add Gruyere and Cheddar cheeses, stirring until fully incorporated and the sauce is thick and creamy. Stir in additional pasta water as needed to achieve your desired consistency. (8 minutes)

Stir spinach into the cooked macaroni. Pour in the cheese sauce, stirring to combine thoroughly. Transfer to the prepared baking dish and sprinkle chopped prosciutto over the top. (5 minutes)

Bake in the preheated oven until the edges are bubbly and golden, 15 to 20 minutes. Let cool slightly before serving. (20 minutes)

For an extra layer of flavor, try using smoked prosciutto.
Feel free to substitute other cheeses such as Fontina, Monterey Jack, or Parmesan.
If you don't have fresh spinach, frozen spinach (thawed and squeezed dry) can be used.
Adjust the amount of red pepper flakes to suit your spice preference.
