In a large, heavy-bottomed pot, combine the water, kimchi, reserved kimchi brine, luncheon meat, chili powder, salt, and pepper. (5 minutes)

Cover the pot and bring to a vigorous boil over medium-high heat. (10 minutes)

Once boiling, reduce the heat to low and gently simmer for 20 minutes, or until the kimchi cabbage is tender and translucent, and the flavors have melded beautifully. (20 minutes)

Taste and adjust seasoning as needed, adding more salt or chili powder to your preference. (2 minutes)

For a richer flavor, consider adding a tablespoon of gochujang (Korean chili paste) along with the chili powder.
Tofu can be added for additional protein, slice firm tofu into cubes and add along with luncheon meat.
Serve hot with a bowl of steamed rice and an assortment of Korean side dishes (banchan) for a complete and satisfying meal.
