Follow The Directions

01

Step

In a large, heavy-bottomed pot or Dutch oven, heat olive oil over medium heat. (2 minutes)

02

Step

Add kielbasa, diced onion, and minced garlic. Cook, stirring occasionally, until the onion is softened and lightly caramelized, and the kielbasa is browned. (10-12 minutes)

03

Step

Pour in vegetable broth, diced tomatoes (with their juices), chopped carrots, tomato sauce, water, and seasoning blend. Stir well to combine. (3 minutes)

04

Step

Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 30 minutes, allowing the flavors to meld together. (30 minutes)

05

Step

Add the farfalle pasta to the soup. Continue to simmer, uncovered, until the pasta is cooked through but still firm to the bite. (10-12 minutes)

06

Step

Taste and adjust seasonings as needed. If desired, garnish with fresh parsley before serving.

For a richer flavor, use smoked kielbasa.
Feel free to add other vegetables like celery or zucchini.
If you don't have farfalle pasta, any small pasta shape will work.
For a heartier soup, add a can of drained and rinsed cannellini beans or other white beans.
This soup is even better the next day after the flavors have had time to develop.

I was skeptical about the salt-free seasoning blend, but it actually adds a lot of flavor without being too salty. I'll definitely be making this again!

This soup is a lifesaver on busy weeknights! My family loves it, and it's so easy to customize with whatever veggies I have on hand.

The caramelized onions really make a difference in the flavor. I also added a pinch of red pepper flakes for a little kick.
