For a smoother soup, use an immersion blender to partially blend the soup before adding the spinach and cream. If you don't have heavy cream, you can use half-and-half or whole milk, but the soup won't be as rich. Feel free to add other spring vegetables, such as peas or fava beans. This soup is even better the next day, as the flavors have a chance to meld together.
