Follow The Directions

01

Step

Engage the Saute Function: In your multi-functional pressure cooker (such as an Instant Pot®), add olive oil and select the 'High Saute' function. Add the carrots, celery, onion, and parsnip. Saute until they begin to soften, releasing their aromatic flavors (approximately 5 minutes). Stir in the turkey broth.

02

Step

Build the Flavor Base: Introduce the chopped cooked turkey, tomato paste, celery leaves, herbes de Provence, salt, black pepper, and red pepper flakes. Stir well to ensure all ingredients are combined, creating a rich and complex flavor profile.

03

Step

Pressure Cook to Perfection: Secure the lid, ensuring it's properly locked. Select the high-pressure setting according to the manufacturer's instructions and set the timer for 5 minutes. Allow 10 to 15 minutes for the pressure to build, as the flavors meld and deepen.

04

Step

Release and Reveal: Employ the quick-release method, in short bursts, to release the pressure according to the manufacturer's instructions (approximately 5 minutes). Carefully unlock and remove the lid, unveiling your flavorful soup base.

05

Step

Pasta Preparation: While the soup is pressure cooking, fill a large pot with lightly salted water and bring to a rolling boil. Add the tubetti pasta and return to a boil. Cook the pasta uncovered, stirring occasionally, until it reaches al dente perfection (7-9 minutes).

06

Step

Assemble and Serve: Ladle the perfectly cooked pasta into bowls and generously top with the Instant Pot® Turkey Soup. Garnish with fresh herbs or a dollop of yogurt for an extra touch of elegance.

For an even richer flavor, consider browning the turkey in the Instant Pot before adding the vegetables.
If you don't have tubetti pasta, any small pasta shape like ditalini or orzo will work well.
Adjust the amount of red pepper flakes to your preference for spice.
This soup is even better the next day, as the flavors have more time to meld.
