Step

Season the chicken: Sprinkle both sides of chicken breasts evenly with Italian seasoning, garlic salt, and ground black pepper. (2 minutes)

Sear the chicken: Turn on a multi-functional pressure cooker (such as Instant Pot®) and select the Saute function. Once the pot is hot, add butter and vegetable oil; allow the butter to melt completely. Add the seasoned chicken breasts, working in batches if necessary to avoid overcrowding the pot. Cook until golden brown on each side, approximately 3 minutes per side. (8 minutes)

Pressure cook: Pour chicken broth over the seared chicken breasts. Press Cancel to stop the Sauté function. Close and lock the Instant Pot lid securely. Select high pressure according to the manufacturer's instructions. Set the timer for 3 minutes. Allow approximately 10 minutes for the pressure to build inside the pot. (13 minutes)

Release pressure: Allow a natural pressure release for 20 minutes, according to the manufacturer's instructions. Carefully release any remaining pressure using the quick-release method, which should take about 5 minutes. (25 minutes)

Serve: Once all pressure is released and the valve has dropped, carefully unlock and remove the lid. The chicken breasts should be cooked through and incredibly tender. Serve immediately or shred for later use.

For even more flavor, try adding a squeeze of lemon juice after cooking.
Adjust the seasoning to your liking. Smoked paprika or onion powder are great additions.
Ensure the chicken breasts are not stacked on top of each other in the Instant Pot for even cooking.
If using thicker chicken breasts, you may need to increase the pressure cooking time by a minute or two.
