Follow The Directions

Step

Rinse the black-eyed peas thoroughly under cold water. Season generously with salt and freshly ground black pepper. (5 minutes)

Transfer the seasoned peas to the bottom of your Instant Pot®. Add the chicken broth, crushed tomatoes, cubed ham, chopped red onion, and minced garlic. (5 minutes)

Step

Close and lock the lid of the Instant Pot®. Select the 'Bean' setting and set the timer for 30 minutes at high pressure, following the manufacturer's instructions. Allow 10-15 minutes for the pressure to build. (45 minutes)

Once the cooking cycle is complete, allow the pressure to release naturally for 10-40 minutes, according to the manufacturer's instructions. (10-40 minutes)

Carefully open the Instant Pot® after the pressure has fully released. Stir gently and serve hot. Adjust seasoning to taste.

For a richer flavor, consider using smoked ham hock in addition to or in place of cubed ham.
If you prefer a thicker stew, you can mash some of the black-eyed peas against the side of the pot after cooking.
Serve with a side of cornbread or collard greens for a truly authentic Southern meal.
