Remove the skillet from the oven as soon as the butter is melted, even if the oven hasn't fully reached the set temperature. Tilt the skillet to coat all sides with the melted butter.

In a large bowl, combine the cornmeal, flour, sugar, baking powder, salt, and pepper.

In another large bowl, thoroughly whisk the eggs. Add the milk and honey, whisking until well combined. Gently add the dry ingredients to the wet ingredients and stir until just mixed. Pour the batter into the prepared skillet. Use a folding motion to incorporate any remaining melted butter.

Bake in the preheated oven until a toothpick inserted into the center comes out clean, approximately 20 to 25 minutes. Remove from the oven and let sit for 5 minutes before cutting and serving.

For a richer flavor, use brown butter instead of melted butter to grease the skillet.
Feel free to adjust the amount of black pepper to your preference. A pinch of cayenne pepper can also add a nice kick.
Serve warm with a drizzle of honey or a pat of butter.
