For extra crispy shrimp, double-fry them! Fry them once for 1 minute, remove, and then fry them again for another minute until golden brown. Make sure the oil is hot enough before frying the shrimp. If the oil isn't hot enough, the shrimp will absorb too much oil and become soggy. You can prepare the candied walnuts ahead of time and store them in an airtight container.
