To avoid lumps, make sure the broth is at room temperature when adding it to the roux. For a smoother gravy, strain it through a fine-mesh sieve before serving. Gravy can be made ahead of time and reheated gently on the stovetop or in the microwave. Add a little broth if it thickens too much upon standing.
