In a large bowl, sift together the flour and baking powder. Stir in the granulated sugar. Gradually whisk in the egg yolk mixture and 3/4 cup plus 2 tablespoons of buttermilk until a smooth, thick batter forms. If the batter is too thick, add more buttermilk, 1 tablespoon at a time, until it reaches a pourable consistency. (5 minutes)

In a separate clean, dry bowl, beat the egg white until stiff peaks form. Gently fold the beaten egg white into the pancake batter, being careful not to overmix. This will help create light and fluffy pancakes. (3 minutes)

Heat 1 teaspoon of butter in a nonstick skillet or griddle over medium-high heat. Once the butter is melted and the skillet is hot, reduce the heat to medium. (2 minutes)

Using a ladle or measuring cup, pour 1/8 of the batter onto the hot skillet for each pancake. Cook until bubbles form on the surface and the edges appear dry, about 3 to 4 minutes. (3-4 minutes)

Flip the pancakes and cook until golden brown on the other side, about 2 to 3 minutes. Transfer the cooked pancakes to a warm plate or a low-temperature oven to keep them warm while you cook the remaining batter. (2-3 minutes)

Once all the pancakes are cooked, use a large heart-shaped cookie cutter to cut a heart in the center of half of the pancakes. Gently remove and discard the heart-shaped centers. (5 minutes)

Place a few pieces of chopped chocolate on top of a whole pancake, then top it with a heart-cut pancake, creating a chocolate-filled sandwich. Repeat with the remaining pancakes and chocolate. (5 minutes)

Dust the finished heart-shaped pancakes with confectioners' sugar just before serving. Serve immediately and enjoy! (1 minute)

For extra flavor, add a dash of vanilla extract or a pinch of cinnamon to the pancake batter.
If you don't have buttermilk, you can make a substitute by adding 1 tablespoon of lemon juice or white vinegar to 3/4 cup plus 2 tablespoons of regular milk. Let it sit for 5 minutes before using.
Be careful not to overcook the pancakes, as they can become dry. They are ready to flip when bubbles start to form and the edges look set.
Feel free to experiment with different types of chocolate or add other fillings, such as fruit or nuts.
