Quick-Pickle the Onions and Jalapeno: Peel the outer layer of the red onion and slice it as thinly as possible. Thinly slice the jalapeno into rounds, removing the seeds for less heat if desired. In a small bowl, combine 1/4 of the sliced red onion, jalapeno rounds, lime juice, 0.5 teaspoon of sugar, and a pinch of salt. Set aside to quick-pickle, stirring occasionally, until ready to serve. (15 minutes)

Prepare the Sriracha Cream: In a small bowl, whisk together the sour cream and Sriracha sauce until smooth. Adjust the amount of Sriracha to your preference. Set aside. (5 minutes)

Caramelize the Pineapple and Onions: Heat 1 1/2 teaspoons of oil in a large pan over medium-high heat. Add the pineapple rings and cook, stirring occasionally, until lightly caramelized, about 3-4 minutes per side. Remove from the pan and set aside. Add the remaining red onion and oil to the pan; season with salt and pepper. Cook and stir until softened, about 4-5 minutes. Add the minced garlic and cook until fragrant, about 30 seconds. (10 minutes)

Cook the Beef: Drain the sirloin from the marinade. Add it to the pan with the onions and garlic, and season with salt and pepper. Cook until browned, about 4-5 minutes. Carefully add the reserved pineapple juice mixture to the pan. Cook and stir until the liquid has mostly evaporated and the beef is coated in the sauce, about 1-2 minutes. Remove from the heat and stir in the pickling liquid from the onion and jalapeno. Taste and season with salt and pepper as needed. (10 minutes)

Assemble the Sliders: To assemble, add the cooked sirloin steak to each slider bun. Top with the jalapeno slaw, a dollop of Sriracha cream, and a caramelized pineapple ring. Serve immediately and savor the explosion of flavors!

For a milder flavor, reduce the amount of Sriracha in the cream sauce or remove the seeds and ribs from the jalapeno before slicing.
If you don't have ponzu sauce, you can substitute with soy sauce and a splash of lime juice.
These sliders are best served immediately to prevent the buns from getting soggy.
Try using brioche slider buns for an extra touch of richness.
