For an extra layer of flavor, try using smoked Gouda or Gruyere cheese in addition to or in place of some of the cheddar. If you prefer a smoother soup, you can use an immersion blender to partially blend the soup after the potatoes are cooked. Garnish with fresh parsley, chives, or a dollop of sour cream for an elegant presentation.
