In a large resealable plastic bag, combine the zucchini, squash, and bell pepper. Pour in enough Italian dressing to thoroughly coat the vegetables. Seal the bag, pressing out excess air, and refrigerate for at least 1 hour to marinate. (Time: 1 hour +)

In a blender, combine the milk, eggs, flour, 1 1/2 teaspoons of vegetable oil, and salt. Blend until smooth. Cover the batter and refrigerate for 1 hour. This allows the gluten to relax, resulting in more tender crepes. (Time: 1 hour +)

Heat a skillet or crepe pan over medium-high heat. Brush lightly with the remaining vegetable oil. Pour 1/4 cup of crepe batter into the pan, immediately tilting to evenly coat the surface. Cook for 2 to 3 minutes per side, or until golden brown. Transfer the crepe to a clean surface to cool slightly. Repeat with the remaining batter. (Time: 20-30 minutes)

Once the crepes are cool enough to handle, cut them into strips approximately 1 to 2 inches wide. These will be woven onto the skewers. (Time: 5 minutes)

Preheat your grill to medium heat and lightly oil the grate to prevent sticking. Grill the marinated zucchini, squash, and bell pepper, along with the cubed ham, until the vegetables are tender-crisp and the ham is heated through (internal temperature of at least 160 degrees F or 71 degrees C). This should take approximately 8 to 10 minutes. Cut the ham into bite-sized pieces if it's not already. (Time: 10-15 minutes)

Now for the fun part! Thread the crepe strips, grilled ham, zucchini, squash, peppers, pineapple slices, and cherry tomatoes onto skewers in whatever pattern appeals to you. Get creative with the arrangement! (Time: 10 minutes)

For a richer crepe, substitute whole milk for heavy cream.
If you don't have Italian dressing, a simple vinaigrette made with olive oil, balsamic vinegar, and herbs will work well.
These kebabs are best served immediately after grilling. You can prepare the crepes and marinate the vegetables ahead of time to save time on the day of serving.
