Thread the marinated lamb pieces onto skewers, ensuring they are closely arranged but not tightly packed. Gently wipe off any excess marinade with a paper towel. Brush the skewered lamb with vegetable oil and sprinkle with the remaining 1 teaspoon of kosher salt. (10 minutes)

Preheat your grill to medium heat and lightly oil the grill grate to prevent sticking. (5 minutes)

Place the lamb skewers on the preheated grill and cook for approximately 5 to 7 minutes on each side, or until the lamb springs back to the touch and is cooked to your desired level of doneness. (10-14 minutes)

Remove the grilled lamb skewers from the grill. Garnish with sliced red onions, fresh lemon wedges, and chopped cilantro. Serve immediately with spicy cilantro chutney. (5 minutes)

For a richer flavor, consider adding a tablespoon of tomato paste to the marinade.
If you don't have a grill, you can broil the lamb skewers in the oven. Place them on a baking sheet and broil for about 4-6 minutes per side, or until cooked through.
Serve with warm naan bread or basmati rice for a complete meal.
Adjust the amount of cayenne pepper according to your spice preference.
