For a richer flavor, roast the fresh tomatoes and poblano peppers in the oven before adding them to the soup. If you don't have fresh thyme, 1/2 teaspoon of dried thyme can be substituted. Adjust the amount of smoked paprika to your preference. A little goes a long way! The soup can be made ahead of time and reheated. The flavors will meld and deepen overnight.
