In a saucepan, combine the sugar and vinegar. Bring the mixture to a boil over medium heat, stirring until the sugar is completely dissolved. Once boiling, immediately remove from heat.

For a less sweet slaw, reduce the amount of sugar by 1/4 cup.
Feel free to experiment with other types of bell peppers, such as red or yellow, for added color and flavor.
The slaw can be stored in an airtight container in the refrigerator for up to 3 days.
