In a medium bowl, stir together the brown sugar and 2 cups of all-purpose flour. Add the cold, cubed butter and use a pastry blender or your fingers to cut the butter into the flour mixture until it resembles coarse crumbs. (10 minutes)

Bake in the preheated oven until the cake is set, the plums are soft, and the crumble topping is golden brown, about 1 hour 30 minutes. (90 minutes)

For a richer flavor, use European-style butter.
If plums are very tart, toss them with a tablespoon or two of granulated sugar before arranging them on the cake.
