Follow The Directions

01

Step
5 mins

Prepare the Fruit Puree: In a food processor or blender, combine half of the mango and half of the papaya with the balsamic vinegar. Process until smooth. Set aside. (5 minutes)

02

Step
10 mins

Candied Almonds: Melt butter in a small skillet over medium heat. Add almonds, stirring constantly, until lightly browned. Incorporate brown sugar, stirring until the almonds are evenly coated. Remove from heat and spread the candied almonds on waxed paper, separating any clumps. Allow to cool completely. (10 minutes)

03

Step
5 mins

Assemble the Salad: Just before serving, place romaine lettuce in a large serving bowl. Cube the remaining mango and papaya halves, and gently toss with avocado and lettuce. Drizzle the pureed fruit dressing over the salad, and lightly salt. Sprinkle with the candied almonds. (5 minutes)

04

Step

Serve: Serve immediately and enjoy the delightful flavors of this tropical salad.

For an extra layer of flavor, consider adding a squeeze of fresh lime juice to the fruit puree.
To prevent the avocado from browning, toss it with a little lime or lemon juice before adding it to the salad.
The candied almonds can be made ahead of time and stored in an airtight container for up to a week.
Feel free to experiment with other greens like spinach or mixed greens in place of romaine lettuce.
If you don't have balsamic vinegar on hand, you can use a light vinaigrette or even a simple dressing of olive oil and lemon juice.
