Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain.

Add cooked potatoes, chopped tomatoes, white wine, fish stock, and tomato paste. Mix well and bring to a boil.

Gently add whitefish fillets. Mix carefully and simmer until fish flakes easily with a fork, about 4 minutes.

For an extra layer of flavor, consider adding a pinch of red pepper flakes or a bay leaf to the stew.
Garnish with fresh flat-leaf parsley and serve with crusty bread or toast for a complete and satisfying meal.
Any firm white fish, such as cod, halibut, or sea bass, will work well in this stew. Adjust cooking time based on the thickness of the fillets.
