Step

Steam the Carrots: Place a steamer insert into a saucepan, and fill with water to just below the bottom of the steamer. Cover, and bring the water to a boil over high heat. Add the carrots, recover, and steam until very tender, about 15 minutes. Drain water, remove steamer basket, and return carrots to pan; mash with an electric mixer until smooth. (Approximately 20 minutes)

Prepare the Oven and Mold: Preheat oven to 350 degrees F (175 degrees C). Generously grease a 12-cup ring mold or Bundt® pan with butter or cooking spray. Sprinkle the mold evenly with 5 tablespoons of cornflake crumbs to prevent sticking. (Approximately 5 minutes)

Combine Ingredients: In a large bowl, crack the eggs and beat at high speed until light yellow, about 1 minute. Stir in the cooked carrots, milk, Cheddar cheese, melted butter, chopped onion, salt, pepper, cayenne pepper, nutmeg, and the remaining 1 1/2 cups of cornflake crumbs; mix well until all ingredients are thoroughly combined. (Approximately 5 minutes)

Bake: Carefully spoon the carrot mixture into the prepared ring mold, spreading it evenly. Bake in the preheated oven until the ring is puffed and lightly golden brown, about 1 hour. (Approximately 1 hour)

Cool and Invert: Remove the carrot ring from the oven and let it stand for 30 minutes before inverting it onto a serving platter. This allows the ring to set and prevents it from breaking upon removal. (Approximately 30 minutes)

For a smoother texture, use a food processor to puree the steamed carrots instead of mashing with an electric mixer.
Feel free to experiment with different types of cheese. Gruyere or Monterey Jack would also work well.
If you don't have cornflake crumbs, you can substitute with breadcrumbs or crushed crackers.
A dollop of sour cream or Greek yogurt adds a lovely tang when serving.
