Follow The Directions

01

Step

In a large bowl, combine the finely chopped carrots, celery, and onion. Sprinkle with 1 teaspoon of salt and set aside. (Prep time: 5 minutes)

02

Step

Heat 1 tablespoon of olive oil in a large, heavy-bottomed soup pot over medium heat. Add the prepared vegetables and cook, stirring occasionally, until the onion becomes translucent and softened. (Cook time: 5-7 minutes)

03

Step

Create a well in the center of the pot by pushing the vegetables aside. Add the remaining 1 tablespoon of olive oil to the center. Sprinkle the garam masala over the hot oil and toast for 1 to 2 minutes, until fragrant. Stir the toasted garam masala into the vegetables, ensuring they are well coated. (Cook time: 2-3 minutes)

04

Step

Pour the vegetable broth into the pot and bring to a boil. Reduce the heat to medium-low, add the semi-pearled farro, cover, and simmer gently until the farro is almost tender. (Simmer time: 20 minutes)

05

Step

Add the red lentils to the pot. Cover and continue to simmer, adding more broth as needed to maintain a slightly soupy consistency, until both the farro and lentils are tender but not mushy. (Simmer time: 20 minutes). Season with additional salt to taste.

For a richer flavor, toast the garam masala in a dry pan before adding it to the oil.
Adjust the amount of vegetable broth to achieve your desired consistency. Some prefer a thicker masala, while others enjoy a soupier version.
Consider adding a squeeze of lemon juice or a dollop of plain yogurt before serving for a touch of brightness and creaminess.
