For a milder flavor, use sweet Italian sausage instead of hot. Add a pinch of red pepper flakes to the sausage mixture for an extra kick. If you don't have fresh parsley, dried parsley can be substituted. Use about 1/2 teaspoon. These mushrooms can be prepared ahead of time and baked just before serving.
