Pour water into the bottom of a pressure cooker. Place a trivet inside. Turn the heat to high.

Arrange the scrubbed potatoes in a single layer within the pressure cooker. Secure the lid. Cook over high heat until the pressure regulator reaches 15 psi, approximately 5-10 minutes.

Remove the pressure cooker from heat. Allow the pressure to release naturally, about 10 minutes. Once the pressure is fully released, carefully unlock and remove the lid.

For even cooking, select potatoes that are similar in size.
These pressure-cooked potatoes are fantastic for potato salad, mashed potatoes, or roasted potatoes.
