Preheat oven to 375°F (190°C). Line two baking sheets with parchment paper (aluminum foil tends to stick).

In a medium saucepan, melt the butter over medium heat. Remove from heat and stir in oats, sugar, flour, corn syrup, milk, vanilla extract, and salt until thoroughly combined. (2 minutes)

Drop by level teaspoonfuls onto the prepared baking sheets, leaving about 3 inches between each cookie. Use a dampened rubber spatula or your fingertips to gently spread each mound into a very thin, even circle. The thinner, the crispier! (5 minutes)

Bake in the preheated oven until the edges are golden brown and the centers are lightly browned, approximately 5-7 minutes. Watch carefully, as they can burn quickly.

Let the cookies cool completely on the baking sheets. They will crisp up further as they cool. (20 minutes)

While the cookies are cooling, gently melt the chocolate chips in a double boiler or microwave in 30-second intervals, stirring until smooth. Be careful not to overheat the chocolate. (5 minutes)

Once the cookies are completely cool, carefully peel them off the parchment paper. Spread a thin layer of melted chocolate on the flat side of half of the cookies. Top with the remaining cookies to create sandwiches. (15 minutes)

Allow the chocolate to set completely before serving. For a quicker set, you can place the cookies in the refrigerator for a few minutes.

For an extra touch of elegance, sprinkle the melted chocolate with a pinch of sea salt before sandwiching the cookies.
Store the finished cookies in an airtight container at room temperature for up to 3 days.
Feel free to experiment with different types of chocolate! Dark chocolate, milk chocolate, or even white chocolate would be delicious.
These cookies are best enjoyed the day they are made, as they tend to soften over time.
