Follow The Directions

Rinse the rice thoroughly under cold water until the water runs clear. This removes excess starch and helps prevent sticking. (2 minutes)

In a large saucepan with a tight-fitting lid, combine the rinsed rice, water (or broth), minced onion, salt, annatto powder, smoked paprika, and black pepper. (3 minutes)

Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low, cover the pan tightly, and simmer. (2 minutes)

After 10 minutes of simmering, gently stir in the thawed peas. (1 minute)

Continue to cook, covered, until all the liquid has been absorbed and the rice is tender and fluffy. This should take approximately 15-20 minutes. Avoid lifting the lid during this time to ensure even cooking. (20 minutes)

Once cooked, fluff the rice gently with a fork. Serve hot, garnished with pimento slices, if desired.

For a richer flavor, substitute chicken broth for water. If using broth, reduce the amount of salt added.
A pinch of saffron threads can be used in place of annatto powder for a more intense yellow color and distinct flavor.
Feel free to add other vegetables such as diced carrots or bell peppers along with the peas.
Leftover yellow rice can be stored in an airtight container in the refrigerator for up to 3 days.
