For a richer flavor, use thick-cut bacon. Adjust the amount of hot sauce to your desired level of spice. If you don't have fire-roasted tomatoes, regular diced tomatoes will work, but the fire-roasted ones add a unique smoky depth. Feel free to substitute with your favorite type of shredded cheese. For a vegetarian version, omit the bacon and use a plant-based ground beef substitute. If the mixture seems dry while cooking, add a splash more beef broth. This dish is even better the next day, as the flavors have more time to meld!
