Prepare the Ramen: Place ramen noodles in a heatproof bowl. Set the seasoning packet aside. Pour boiling water over the noodles until fully submerged. Let stand until softened, about 3-5 minutes.

Cook the Chicken: Heat 1 tablespoon of sesame oil in a large skillet or wok over medium-high heat. Add the diced chicken and stir-fry until lightly browned. Add oyster sauce and 1 tablespoon of soy sauce. Continue to stir-fry until the chicken is cooked through and no longer pink, about 5-7 minutes.

Add Vegetables and Aromatics: Add the frozen mixed vegetables to the skillet with the chicken. Cover and cook until the vegetables are heated through and tender-crisp, about 5 minutes. Stir in the freshly grated ginger and 1 teaspoon of minced garlic. Stir-fry for another minute until fragrant.

Prepare the Sauce: Drain the softened ramen noodles, reserving 2 tablespoons of the soaking water. Set aside.

Combine and Finish: Heat the remaining 1 tablespoon of sesame oil in the same skillet over medium heat. Add the reserved 2 tablespoons of noodle water, half of the ramen seasoning packet (adjust to taste), the remaining 1 tablespoon of soy sauce, the remaining 1 teaspoon of minced garlic, and chili powder. Bring to a simmer.

Add the Noodles: Add the drained ramen noodles to the sauce in the skillet. Cook and stir constantly until the noodles are well coated and the sauce has thickened slightly, about 2-3 minutes.

Combine and Serve: Transfer the chicken and vegetable mixture to the skillet with the noodles. Toss gently to combine. Serve immediately in bowls and enjoy!

For extra flavor, marinate the chicken in a mixture of soy sauce, ginger, and garlic for at least 30 minutes before cooking.
Feel free to customize the vegetables based on your preference. Sliced bell peppers, mushrooms, or snap peas would also be delicious.
If you don't have oyster sauce, you can substitute with hoisin sauce or a bit more soy sauce.
Adjust the amount of chili powder to your desired level of spiciness.
Garnish with sesame seeds or chopped green onions for added visual appeal and flavor.
