For an extra layer of flavor, try marinating the chicken breasts in a mixture of Dijon mustard, olive oil, and herbs for at least 30 minutes before grilling.
Feel free to add other vegetables to the salad, such as cherry tomatoes, bell peppers, or cucumber.
If you don't have fresh parsley, dried parsley can be used, but use about half the amount.
The pasta salad can be made ahead of time and stored in the refrigerator for up to 2 days. Add the parsley just before serving for the best flavor.
