Follow The Directions

01

Step

In a medium bowl, gently combine the raspberries, blackberries, and strawberries. Sprinkle with ¼ cup sugar, lemon zest, and lemon juice. Stir delicately until the sugar is incorporated and the berries begin to release their luscious juices. Cover with plastic wrap and refrigerate for at least 1 hour, allowing the flavors to meld and intensify. (Time: 60 minutes)

02

Step

In a chilled bowl, combine the heavy cream and crème fraîche. Add the vanilla extract. Using a whisk or electric mixer, whip until soft peaks form and the cream holds its shape. Be careful not to overwhip. (Time: 5-8 minutes)

03

Step

To assemble the fools, begin by sprinkling a generous layer of crushed shortbread cookies at the bottom of each serving glass or bowl. Spoon a layer of the macerated berries over the cookies, followed by a generous dollop of whipped cream. Repeat the layers, ending with a final sprinkle of crushed shortbread for an elegant touch. Serve immediately or chill briefly to allow the flavors to further meld.

For an extra layer of flavor, consider adding a splash of Grand Marnier or other orange liqueur to the berries as they macerate.
Feel free to substitute other berries or stone fruits, such as peaches or nectarines, depending on the season and your preference.
If you don't have shortbread cookies, gingersnaps or amaretti cookies would also work well.
Make sure all ingredients are well chilled before starting. This will help the cream whip up more easily.
