For an even richer flavor, use homemade beef broth instead of chicken broth. If you don't have beef shank, you can substitute chuck roast, but the stew will be less gelatinous. A splash of red wine vinegar or Worcestershire sauce can add depth of flavor to the stew. The stew can be made a day ahead and reheated. The flavors will meld and deepen overnight.
