Follow The Directions

01

Step

Prepare the Rib Rub: In a medium bowl, combine the white sugar, brown sugar, sea salt, New Mexico chile powder, garlic powder, onion powder, paprika, ancho chile powder, black pepper, rosemary, thyme, cumin, nutmeg, allspice, and cayenne pepper. Mix thoroughly until well combined. (5 minutes)

02

Step

Marinate the Ribs: Generously coat all sides of the baby back ribs with the prepared rib rub, ensuring an even layer. Wrap the ribs tightly in plastic wrap and refrigerate for at least 8 hours, or preferably overnight, to allow the flavors to penetrate the meat. (8 hours - overnight)

03

Step

Smoke the Ribs: Preheat your smoker to 300 degrees F (150 degrees C) according to the manufacturer's instructions. Place the ribs directly on the smoker grate, meat-side up. Smoke for approximately 1 1/2 hours, or until the ribs develop a rich, browned color. (1 hour 30 minutes)

04

Step

Cider Braise: Pour the apple cider into an aluminum roasting pan. Carefully arrange the smoked ribs in the pan, standing them on end if necessary to fit. Cover the pan tightly with aluminum foil to create a sealed environment. Return the pan to the smoker and continue smoking the ribs for an additional 2 hours, or until the meat is incredibly tender and easily pulls away from the bone. (2 hours)

05

Step

Barbecue Glaze: Remove the ribs from the smoker and transfer them to a preheated grill. Brush the top side of the ribs generously with your favorite barbecue sauce. Grill for about 10 minutes per side, or until the sauce caramelizes and the ribs develop a deep, flavorful crust. (20 minutes)

For a deeper smoke flavor, use wood chips like applewood or hickory.
Adjust the amount of cayenne pepper to suit your preferred level of spiciness.
If you don't have a smoker, you can use your oven to bake the ribs at 300 degrees F (150 degrees C) after the cider braising step.
Feel free to experiment with different barbecue sauces to find your perfect flavor combination.

The smoking time was spot on. I used applewood chips, and the ribs had a fantastic smoky flavor.
