For a thicker chowder, add a slurry of 1 tablespoon cornstarch mixed with 2 tablespoons cold water during the last 5 minutes of simmering.
Fresh thyme sprigs added during simmering will impart a subtle herbal aroma.
Do not boil the chowder after adding the half-and-half, as it may cause the cream to curdle.
