Follow The Directions

01

Step

In a large pot or Dutch oven, heat the vegetable oil over medium heat. Season the beef cubes generously with salt and black pepper. Add the beef and crushed garlic to the pot and brown on all sides, approximately 10 minutes.

02

Step

Pour in the water, pineapple juice, chopped onion, tomato sauce, and tomato paste. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer until the beef is nearly tender, about 35 to 45 minutes.

03

Step

Stir in the diced potatoes, sliced red bell pepper, diagonally sliced carrot, mini sausages, pineapple chunks (with their juice), drained olives, and bay leaves. Return the stew to a boil, then reduce the heat and simmer until the potatoes are tender, about 20 minutes more.

04

Step

Season the Caldereta with hot pepper sauce, salt, and black pepper to taste. Adjust the seasoning as needed to achieve your desired level of spice and flavor.

For a richer flavor, consider adding 4 ounces of liver pate in place of tomato paste. This is a traditional variation that adds depth and complexity to the stew.
Feel free to customize your Caldereta with additional vegetables such as garbanzo beans or peas. A handful of raisins can also add a touch of sweetness.
Serve Caldereta hot over a bed of fluffy steamed rice. The sauce is perfect for soaking into the rice, making every bite a delight.
Adjust the amount of hot pepper sauce to suit your spice preference. Start with a smaller amount and add more to taste.
For best results, use a good quality beef stew meat that will become tender and flavorful during the long simmering process.
