Follow The Directions

01

Step

Prepare the Roux (35 minutes): In a saucepan over medium heat, melt 1/3 cup butter. Sprinkle in a pinch of flour to test if the butter is hot enough (it should bubble). Whisk in the remaining flour to form a thick paste, similar to cake frosting. Continue cooking, whisking constantly, until the roux turns a peanut butter-brown color. This step is crucial for the depth of flavor.

02

Step

Sauté the Aromatics (4 minutes): In a separate small saucepan over medium-high heat, melt 4 tablespoons of butter. Add the chopped celery, onion, bell pepper, and garlic. Cook until the vegetables are tender and fragrant.

03

Step

Combine and Infuse (5 minutes): Transfer half of the sautéed vegetables to a large saucepan. Pour the prepared roux into the small saucepan containing the remaining vegetables. Heat over medium-low heat. Add the diced tomatoes and green chiles, tomato paste, onion powder, garlic powder, white sugar, and cayenne pepper. Stir well to combine.

04

Step

Build the Sauce (10 minutes): Pour the tomato sauce and vegetable oil into the large saucepan with the vegetable mixture. Add the roux mixture and 1 cup of water. Bring to a simmer and cook for 10 minutes, allowing the flavors to meld.

05

Step

Simmer and Enrich (3 minutes): Add the remaining 2 cups of water to the sauce. Bring it back to a simmer. Add the shrimp and cook until they turn pink and opaque, indicating they are cooked through.

06

Step

Combine and Finish (10 minutes): Stir in the cooked spaghetti, ensuring the strands are separated and coated in the sauce. Cover the saucepan and cook until the spaghetti is tender yet firm to the bite (al dente).

07

Step

Season and Garnish (2 minutes): Season the pasta with salt and black pepper to taste. Garnish with freshly chopped parsley before serving.

For a richer flavor, use shrimp stock in place of some of the water.
Adjust the amount of cayenne pepper to control the level of spice.
If you don't have fresh parsley, dried parsley can be used, but the flavor will be less vibrant. Add dried parsley during the sauce-building stage.
To make the dish vegetarian, omit the shrimp and add sliced mushrooms or zucchini during the vegetable sautéing stage.
