For a richer flavor, use shrimp stock in place of some of the water. Adjust the amount of cayenne pepper to control the level of spice. If you don't have fresh parsley, dried parsley can be used, but the flavor will be less vibrant. Add dried parsley during the sauce-building stage. To make the dish vegetarian, omit the shrimp and add sliced mushrooms or zucchini during the vegetable sautéing stage.
