Prepare the grill: Preheat an outdoor grill for high heat and lightly oil the grate.

Caramelize the onions and mushrooms: Melt butter in a skillet over medium-low heat. Add the sliced onion and mushrooms. Cook, stirring occasionally, until the onions are very tender and beginning to brown, about 10-15 minutes. Sprinkle brown sugar over the mixture and continue cooking until the onions are deeply caramelized, an additional 5-10 minutes. Remove from heat and set aside.

Prepare the patties: In a large bowl, gently mix together the ground beef, egg, breadcrumbs, horseradish, steak sauce, Worcestershire sauce, minced garlic, dried onion, salt, and pepper. Be careful not to overmix. Divide the mixture into 4 equal portions and shape into patties about 6 inches wide and 1/2 inch thick.

Grill the burgers: Place the patties on the preheated grill and cook for approximately 3 minutes per side, until nicely browned. Reduce the heat to medium and continue cooking for another 3 minutes per side. During the last minute of cooking, top each burger with a slice of pepper jack cheese, allowing it to melt slightly.

Assemble and serve: Top each burger with approximately 1/4 of the caramelized mushroom and onion mixture, 3 bacon halves, and 1 tablespoon of guacamole. Serve immediately on your favorite burger buns.

For best results, use a good quality ground beef with a bit of fat (80/20 blend is recommended) to ensure juicy and flavorful burgers.
Don't overmix the ground beef mixture, as this can result in tough burgers. Mix just until the ingredients are combined.
Adjust the amount of horseradish and guacamole to suit your personal taste preferences.
For an extra smoky flavor, try grilling the bacon for a few minutes before adding it to the burgers.
