Follow The Directions

01

Step
7 mins

Gently poach the oysters: In a skillet, combine the drained oysters and their reserved liquid. Cook over medium heat until the edges just begin to curl, about 5-7 minutes. Remove from heat and set aside.

02

Step
14 mins

Prepare the vegetables: In a saucepan, combine the chopped onion, diced potato, chopped broccoli, and water or vegetable broth. Bring to a boil, then reduce heat and simmer until the vegetables are tender, approximately 12-15 minutes. Drain the vegetables, reserving about 1 cup of the cooking liquid.

03

Step
6 mins

Create the velvety base: In a large pan or Dutch oven, melt the butter over medium heat. Whisk in the flour and cook for about 1 minute, creating a smooth roux. Gradually pour in the reserved vegetable cooking liquid and milk (or milk/cream mixture), whisking constantly to prevent lumps. Continue to cook, stirring frequently, until the mixture thickens slightly, around 5-7 minutes.

04

Step
5 mins

Combine and finish: Add the poached oysters and the cooked vegetables to the milk mixture. Cook over medium-low heat until everything is heated through and the flavors have melded, about 5 minutes. Season generously with salt and freshly ground black pepper to taste.

05

Step
0 mins

Serve: Ladle the chowder into bowls and garnish with fresh parsley, if desired. Enjoy immediately!

For a richer flavor, substitute half-and-half or heavy cream for some of the milk.
A pinch of cayenne pepper or a dash of hot sauce can add a subtle kick.
If you prefer a thicker chowder, you can add a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water) to the milk mixture while it's thickening.
Fresh thyme or bay leaf can be added while simmering the vegetables for a deeper flavor.
Be careful not to overcook the oysters, as they can become tough.
