In a medium saucepan, combine water and sugar. Heat over medium heat, stirring constantly until sugar is completely dissolved and the mixture is clear. Avoid boiling. (Approximately 5-7 minutes)

Pour the chilled mixture into a shallow, freezer-safe dish with a tight-fitting lid. Cover and freeze for about 45 minutes, or until the edges begin to freeze while the center remains slushy.

Using a fork, break up the frozen edges and stir the crystals into the center. Ensure the mixture is evenly combined. Cover and return to the freezer for another 30-40 minutes.

Repeat the process of scraping and stirring the granita with a fork every 30-40 minutes for a total of 3-4 times, until the mixture transforms into light, dry, and fluffy crystals.

To serve, spoon the granita into chilled glasses or bowls. Garnish with lemon wheels and a sprinkle of fresh lemon zest.

For a smoother texture, consider using a blender or food processor to break up the ice crystals after the initial freezing stage.
Adjust the sweetness to your liking by adding more or less sugar. Taste the mixture before freezing.
If Meyer lemons are unavailable, substitute with regular lemons but add a touch of simple syrup to compensate for the difference in sweetness.
Granita can be stored in the freezer for up to a week. Fluff it with a fork before serving if it becomes too solid.
