Shape the Falafel: Using your hands, form the chilled mixture into 1 1/4-inch balls. Gently place the falafel balls in the air fryer basket, being careful as they will be delicate at this stage.

Air Fry to Perfection: Lightly spray the falafel with sesame oil spray. Set the air fryer to 320°F (160°C) and cook for 10 minutes. For extra crispness, coat with more sesame oil, increase the temperature to 350°F (175°C), and cook for an additional 10 minutes, or until the outsides are beautifully toasted and golden brown. (Total time: 20 minutes)

For best results, ensure the chickpeas are mostly dry after the initial air frying. This prevents a mushy falafel.
