Preheat oven to 350 degrees F (175 degrees C). Spread bread cubes on a baking sheet and season with sage, thyme, and garlic powder. Bake until lightly toasted and fragrant. (10 minutes)

In a large bowl, gently toss bread cubes with grated celery, carrots, onion, and chopped apples. Stir in the cooked rice until evenly distributed.

For a vegetarian option, substitute vegetable broth for chicken broth.
Day-old bread works best for the croutons, as it will absorb the flavors of the herbs and spices better.
