Follow The Directions

01

Step
10 mins

Prepare the Bacon: In a large, deep skillet, cook bacon over medium-high heat, turning occasionally, until crispy and golden brown (8-10 minutes). Transfer bacon to a paper towel-lined plate to drain, reserving the rendered bacon grease in the skillet. Once cooled, crumble the bacon.

02

Step
5 mins

Sauté the Vegetables: While the bacon cooks, heat 1 tablespoon of olive oil in a separate large skillet over medium heat. Add the diced onion, jalapeños, and minced garlic. Sauté until the onion is softened and translucent (approximately 5 minutes).

03

Step
12 mins

Cook the Beef: Increase the heat to medium-high and add the ground beef, salt, and pepper to the sautéed vegetables. Cook, breaking up the beef with a spoon, until browned and cooked through (10-12 minutes). Drain off any excess grease.

04

Step
2 mins

Combine and Heat: Transfer the cooked beef mixture to the skillet containing the reserved bacon grease. Stir in the crumbled bacon until everything is well combined. Keep the mixture warm over low heat.

05

Step
2 mins

Assemble the Tacos: Heat the remaining 1 tablespoon of olive oil in a clean skillet over medium-high heat. Place one tortilla into the hot pan; add a generous spoonful of the beef and bacon mixture onto one half of the tortilla. Cook until the tortilla begins to bubble and lightly browns (30-60 seconds). Fold the tortilla in half over the filling. Continue cooking until the taco is crisp and lightly browned on both sides (1-2 minutes total per taco). Repeat to fill and cook the remaining tacos, adding more oil as needed to prevent sticking.

06

Step

Serve: Serve the hot tacos immediately, garnished with diced Roma tomatoes and shredded Monterey Jack cheese.

For an extra layer of flavor, try adding a pinch of smoked paprika to the beef mixture while cooking.
Feel free to adjust the amount of jalapeños to control the heat level.
Warming the tortillas before filling them will prevent them from cracking.
Serve with your favorite salsa, guacamole, and a dollop of sour cream for a complete taco experience.
