Step

In a large saucepan or Dutch oven, melt the butter over medium heat. Add the minced onion and garlic and sauté until softened and fragrant, about 5 minutes.

Pour in the chicken stock, then whisk in the tomato paste, heavy cream, and lemon juice until well combined. Bring the mixture to a gentle boil over high heat, then reduce the heat to low. Add the 3 cups of pecan pieces and chopped chipotle peppers. Simmer gently for 30 minutes, or until the pecans are tender and the flavors have melded together.

Remove about 2 cups of the soup and set aside. Using an immersion blender, carefully puree the remaining soup directly in the pot until completely smooth. Alternatively, working in batches, transfer the soup to a regular blender, filling the pitcher no more than halfway. Secure the lid tightly, and vent the top to allow steam to escape. Start on low speed and gradually increase to high, blending until smooth. Pour the pureed soup into a clean pot.

Stir the reserved 2 cups of soup back into the pot with the pureed soup. Gently heat through over low heat. Season with salt and additional adobo sauce from the chipotle peppers, to taste. Serve hot, garnished with a sprinkle of chopped pecans.

For a deeper flavor, toast the pecan pieces in a dry skillet over medium heat for 5-7 minutes before adding them to the soup. Watch carefully to prevent burning.
Adjust the amount of chipotle peppers to control the level of spiciness. For a milder flavor, remove the seeds from the chipotle peppers before chopping.
Garnish with a dollop of sour cream or a swirl of crème fraîche for added richness.
