For a spicier kick, add a pinch of red pepper flakes to the luncheon meat mixture. Feel free to substitute your favorite cheese for the cheddar. Gruyere or pepper jack would also be excellent. If you don't have a food processor, you can finely chop the ingredients by hand, though it will take a bit longer. Serve with your favorite burger toppings, such as lettuce, tomato, and pickles.
