In a slow cooker, combine the chicken, peanut butter, chicken broth, zucchini, bell peppers, soy sauce, minced garlic, and sugar. (5 minutes)

Cover and cook on HIGH for 1 hour. Stir well to combine, then cover and continue cooking on LOW for 2-3 hours, or until the chicken is cooked through and the vegetables are tender. (2-3 hours)

Stir in the lime juice. Taste and adjust seasonings as needed. If the sauce is thinner than desired, proceed to the next step. (2 minutes)

In a small bowl, combine ½ tablespoon of cornstarch with ½ tablespoon of water to form a slurry. If the sauce is very thin, use a full tablespoon of cornstarch. (1 minute)

Whisk the cornstarch slurry into the peanut butter sauce in the slow cooker. Allow to cook, uncovered, on HIGH for 15-20 minutes, or until the sauce has thickened to your liking. Stir occasionally to prevent sticking. (15-20 minutes)

While the sauce is thickening, cook the linguine according to package directions in a large pot of salted boiling water until al dente (about 8-10 minutes). Drain well. (10 minutes)

Add the drained linguine to the slow cooker and stir to coat the noodles evenly with the peanut sauce. (2 minutes)

Serve immediately, garnished with chopped roasted peanuts.

For a spicier dish, add a pinch of red pepper flakes or a dash of sriracha to the slow cooker along with the other ingredients.
If you don't have linguine, spaghetti or fettuccine work well as substitutes.
To prevent the peanut butter from sticking to the slow cooker, spray the inside with cooking spray before adding the ingredients.
This dish can be easily doubled or tripled for a larger crowd.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
