Preheat your oven to 400°F (200°C). Lightly grease two large baking sheets with 1 tablespoon of olive oil each. (5 minutes)

In a large bowl, toss the zucchini, carrots, bell peppers, potatoes, cherry tomatoes, and olives with the remaining olive oil, minced garlic, oregano, thyme, salt, and pepper. (10 minutes)

Divide the vegetable mixture evenly between the two prepared baking sheets. Tuck a rosemary sprig and a bay leaf under the vegetables on each sheet. (5 minutes)

Roast in the preheated oven for 25-35 minutes, or until the vegetables are tender and lightly browned, flipping halfway through. (30 minutes)

Remove from oven and evenly distribute the crumbled feta cheese over the roasted vegetables. (2 minutes)

Return to the oven and bake for another 5-10 minutes, or until the feta is slightly melted and warmed through. (7 minutes)

Feel free to use other vegetables such as broccoli, cauliflower, or Brussels sprouts. Adjust cooking time accordingly.
For a richer flavor, use roasted garlic instead of fresh.
