In a large bowl, whisk together the whole wheat flour, pumpkin puree, egg, granulated sugar, salt, and pumpkin pie spice until well combined. The mixture will be thick. (5 minutes)

Add the baking powder and stir until evenly distributed. Slowly pour in 1/4 cup of milk while stirring; mix until all the liquid is absorbed. Add more milk, a tablespoon at a time, and stir until the batter is smooth and has a consistency that flows off a spoon. A wooden spoon inserted into the batter should stand briefly, but the batter should readily pour. (3 minutes)

Gently fold in the chopped pecans. (1 minute)

Heat a nonstick skillet or griddle over medium heat. For each pancake, scoop approximately 1/4 cup of batter onto the hot skillet. (2 minutes)

Cook the pancakes until the edges are dry and bubbles form on the surface, about 2-3 minutes. Flip and cook on the other side until golden brown and cooked through, another 2-3 minutes.

As the pancakes are removed from the skillet, transfer them to a plate. Dust with confectioners' sugar, if desired, and serve immediately with warm maple syrup or your favorite toppings. (2 minutes)

For extra fluffy pancakes, let the batter rest for 5-10 minutes before cooking.
If you don't have pumpkin pie spice, you can substitute with a mixture of cinnamon, nutmeg, ginger, and cloves.
Feel free to experiment with other toppings like whipped cream, chocolate chips, or fresh berries.
If you are using salted butter, you may need to reduce the amount of salt in the recipe.
