Heat 1 tablespoon olive oil in a skillet over medium heat. Add the minced garlic and cook, stirring constantly, until fragrant but not browned. This should only take about 1 minute.

Place the baby red potatoes in a microwave-safe bowl. Drizzle with the remaining 1 tablespoon olive oil and toss to coat evenly. Microwave until the potatoes are tender enough to be easily pierced with a fork, approximately 6-8 minutes. Let them cool slightly until they're comfortable to handle, about 5 minutes.

Carefully slice each potato in half. Gently scoop out the insides of the potatoes into a mixing bowl, being careful not to damage the skins. Set the potato skins aside.

To the bowl of potato flesh, add the sautéed garlic, shredded smoked Gouda, onion powder, salt, and pepper. Mash everything together until smooth and well combined. Taste and adjust seasonings as needed.

Fill each potato skin generously with the potato mixture. Sandwich the potato halves back together, pressing gently to secure. Wrap each filled potato with a piece of bacon, ensuring the ends overlap slightly. Place the bacon-wrapped potatoes onto a baking sheet, seam-side down.

Bake in the preheated oven until the bacon is cooked through and beautifully crisp, approximately 15 to 20 minutes. Keep a close eye on them to prevent burning.

For extra flavor, try adding a pinch of smoked paprika to the mashed potato mixture.
If you don't have smoked Gouda, you can substitute with another smoked cheese, such as Gruyere or cheddar.
To make these ahead, assemble the potato bombs and keep them refrigerated until ready to bake. Add a few minutes to the baking time if baking from cold.
