Add the chopped onion and minced garlic; cook and stir until the onion becomes translucent and the garlic is fragrant, about 5-7 minutes. Add the seasoned vegetable mixture to the skillet and cook, stirring frequently, until the vegetables begin to soften slightly, about 5 minutes. Remove from heat and set aside. (Cook Time: 12 minutes)

In a large pot, combine the chopped tomatoes with 1/4 cup of the red wine. Bring to a gentle simmer over low heat, stirring occasionally. Cook until the tomatoes break down and soften, about 20 minutes. (Cook Time: 20 minutes)

Carefully transfer the tomato mixture to a blender, filling it no more than halfway. Add the remaining 1/4 cup red wine and the cornstarch. Secure the lid tightly, and pulse a few times to start, then blend until smooth. Repeat in batches until all the tomato mixture is pureed. (Blend Time: 10 minutes)

Return the blended tomato sauce to the pot over medium-low heat. Stir in the cooked vegetable mixture. Bring the sauce to a gentle simmer, stirring occasionally to prevent sticking. Cook until the sauce has thickened to your desired consistency, about 1 hour. (Simmer Time: 1 hour)

For a richer flavor, roast the vegetables before adding them to the sauce.
Adjust the herbs and spices to your personal preference.
If you don't have fresh herbs, use dried, but reduce the amount by half.
For a smoother sauce, use an immersion blender directly in the pot after simmering the tomatoes.
This sauce can be made ahead of time and stored in the refrigerator for up to 3 days, or frozen for longer storage.
