For extra flavor, try adding a clove of minced garlic to the duck fat during the last minute of cooking. Feel free to experiment with other herbs and spices. Rosemary, thyme, or smoked paprika would also be delicious. If you don't have duck fat, you can substitute with olive oil or butter, but the flavor will be slightly different. For crispier potatoes, don't overcrowd the pan. If necessary, cook the potatoes in batches.
