Follow The Directions

01

Step

Preheat oven to 350 degrees F (175 degrees C). (5 minutes)

02

Step

Season chicken drumsticks generously with salt and pepper. Arrange in a single layer in an oven-safe baking dish. (2 minutes)

03

Step

Bake in the preheated oven for 20 minutes to render some of the fat and begin cooking the chicken. (20 minutes)

04

Step

While the chicken bakes, whisk together the orange marmalade, Dijon mustard, barbecue sauce, sambal oelek, and soy sauce in a small bowl until well combined. (5 minutes)

05

Step

Remove the dish from the oven and brush the chicken thoroughly with the marmalade mixture, ensuring each piece is well coated. (3 minutes)

06

Step

Return the dish to the oven and bake for another 10 minutes. (10 minutes)

07

Step

Remove the dish again, turn the chicken over, and brush with the remaining marmalade mixture. Continue baking until the chicken is cooked through, the juices run clear when pierced with a fork, and an instant-read thermometer inserted near the bone registers 165 degrees F (74 degrees C), about 10 more minutes. (13 minutes)

08

Step

For a beautiful, glazed finish, preheat the oven's broiler. Place the chicken under the broiler and broil until the skin is deeply caramelized and slightly blistered, keeping a close eye to prevent burning, 3 to 5 minutes. (5 minutes)

09

Step

Let the chicken rest for a few minutes before serving to allow the juices to redistribute. (5 minutes)

For even more flavor, marinate the chicken in the marmalade mixture for at least 30 minutes, or up to overnight, in the refrigerator.
Feel free to adjust the amount of sambal oelek to your preferred level of spiciness.
If you don't have sambal oelek, sriracha or a pinch of red pepper flakes can be used as a substitute.
Serve with rice, roasted vegetables, or a crisp salad for a complete meal.

I found that the chicken started to burn under the broiler, so I moved it to a lower rack in the oven. It turned out perfectly!

I substituted honey for the marmalade, and it was still delicious! It gave the chicken a slightly different flavor profile.

My kids loved this! They're usually picky eaters, but they devoured the chicken. I'll definitely be making this again.

The glaze is amazing! It's the perfect balance of sweet, tangy, and spicy. I used it on chicken thighs, and they turned out so juicy and flavorful.
